Viñedos de 15 años con cubierta vegetal para garantizar la biodiversidad en vida y mejorar la microbiología de los suelos. La vendimia se realiza manualmente en cajas de 15 kg. Cada variedad se vinifica por separado en depósitos de acero inoxidable de 2500 litros y tras la fermentación pasa 5 meses sobre sus lías. Finalmente, se realiza el coupage con la intención de conseguir un equilibrio entre las distintas variedades.
