Red wine from Callejo winery, under the D. O. Ribera del Duero. For the elaboration of Flores de Callejo, vineyards located in the town of Sotillo de la Ribera, on the northern edge of the Duero river basin, are used. They have more than 60 hectares divided into 25 plots distributed in a profile that ranges from 830 meters in the lowest parts to 930 meters in the highest moors. This situation within Ribera del Duero, offers soils of different geological origin. A manual harvest is carried out in individual boxes with a double selection table. The grape enters by gravity to fully respect the product. Finally, it ferments with all-natural yeast.

Red wine from Callejo winery, under the D. O. Ribera del Duero. This wine represents a collection of places located in Sotillo de la Ribera, at altitudes between 855 and 870 meters. They are loamy-clay soils, with limestone bottoms, very loose soils, and oriented to the south, which allow perfect ripening. A manual harvest is carried out in individual boxes, followed by a grape entry by gravity. Fermentation originates with natural yeast. Finally, it is left to rest in new 500-liter French oak barrels for 15 months.

Red wine from Marqués de Griñón winery, under the D. O. La Rioja. The grape comes from selected vineyards in Rioja Alta in the towns of Nájera, Arenzana, Manjarrés and Uruñuela. The bunches are destemmed at 100% and then fermented with a floating pomace cap at a maximum temperature of 28ºC. Once finished, the wine is kept in contact with the skins to obtain the structure and tannins necessary for its subsequent refining in American oak barrels.

Red wine from La Rica winery, under the D. O. La Rioja. The vines are oriented towards the South, they were planted in glass and have an average age of about 60 years. The El Nómada grape is destemmed with filtration of 25% of the whole grape. The must is subsequently fermented alcoholically in stainless steel tanks and Malolactically in French oak wood. The Nómada finally ages for 15 months in French oak barrels of one or two wines. Before being bottled, it is clarified with egg white.Finca de la Rica is one of those historic Rioja wineries run by Alava winemakers that today is led by the fourth generation. It has 31 hectares of vineyards distributed in more than 25 plots.

Ecological vines selected one by one to achieve that it expresses the varietal and terroir balance of a 2 hectare estate. Made with patience, with hardly any squeezing of the destemmed grapes and fermented at low temperatures for a minimum of 30 days in stainless steel tanks, it remains on its lees and without additives for 5 months. Finally, it is slightly filtered and bottled.

White wine from Son Vich de Superna winery, under the D. O. IGP Serra de Tramuntana. The grape is selected in the vineyard. The elaboration is carried out using two methodologies. Half of the grapes are directly pressed at a low temperature to obtain a pure and fresh flower must, the racking is static for 72 hours and then it is fermented with its own yeasts at 13ºC. Separately, a second vinification is carried out with the cold macerated grapes in stainless steel tanks for 48 hours to extract the proper structure provided by the Viognier. It is vinified at 16ºC. Subsequently, the wines are mixed following the most basic criteria of the expression of the terroir. It remains in the bottle for 2 months before going on the market.

It is a plot of just 3 hectares planted on a very loose soil of clay and sand. The harvest is done manually in boxes and is transferred to the winery where a meticulous selection is made. Slowly fermented with native yeasts and macerated for 2 or 3 weeks. Finally, it is aged for 33 months in French oak barrels.
