Rosé wine from Vins 971, under the Designation of Origin V. T. Mallorca. After selection in the vineyard, it is harvested by hand and, once in the winery, the bunch goes through a selection table. It ferments in stainless steel tanks at a controlled temperature and remains in contact with the fine lees for 4 months. Finally it stabilizes with cold.

Rosé wine from the Ava vi winery, under the D.O. V.T. Mallorca. After being destemmed, it proceeds to a direct, soft and fast press to make a fermentation in stainless steel at low temperature. Once the fermentation is finished, it is followed by a racking to eliminate the thick lees and the wine is kept in contact with its fine lees for 5 months before going on to the aging phase in French oak barrels for 6 months.

White wine from Son Alegre winery, under the Designation of Origin V. T. Mallorca. 15-year-old vineyards with plant cover to guarantee biodiversity in life and improve the microbiology of soils. The harvest is carried out manually in 15 kg boxes. Each variety is vinified separately in 2500 liter stainless steel tanks and after fermentation it spends 5 months on its lees. Finally, the coupage is made with the intention to achieve a balance between the different varieties.

Rosé wine from Baigorri winery, under the D. O. La Rioja. After the harvest, the grapes go through the selection table in the winery and are destemmed. It ferments at a low temperature in stainless steel tanks with selected yeasts along with its own lees. Finally, it is filtered and clarified avoiding oxidation before being bottled.

Rosé wine from Marqués de Cáceres winery, under the D. O. La Rioja. The vineyards are between 15 and 20 years old. The harvest is done manually, plot by plot, and each one is vinified separately. After destemming, a maceration of 8 hours is carried out to extract color. After a gentle bleeding, the must ferments in stainless steel tanks at a controlled temperature. It stays on its lees for a month and, after cold stabilizing and filtering, it is assembled and bottled.

Rosé wine from Can Xanet winery, under the Designation of Origin V. T. Mallorca. Each variety is harvested manually in small 12 kilogram boxes and vinified separately. The grapes are cooled in a cold room for a day and then destemmed. It ferments at a controlled temperature of 19ºC with daily punching. Finally, the blend is made and is kept at 15ºC in contact with fine lees and followed by weekly punching until it is bottled 4 months later.

Rosé wine from Son Vich de Superna winery, under the D. O. IGP Serra de Tramuntana. After the selection in the vineyard, the destemmed and crushed grapes are incorporated in stainless steel tanks, macerated between 9 and 14 hours, depending on the vintage, and then bled, obtaining the flower must. The settling is static cold for 72 hours. The fermentation is the result of a meticulous study of 6 vintages in which it has been chosen to select yeasts from Provence. It ferments at 16ºC and does not perform malolactic.
