Gentle de-stemming and low temperature maceration. Separation of the must by gravity. Controlled fermentation at low temperature and minimum rest on fine lees for 6 months.

White wine from Gran Bazán winery, under the D. O. Rías Baixas. The project for this wine began in the late 1980s, when the first experiments with French oak barrels began to be made. During the last harvests, the technique has been refined to achieve a wine with a perfect balance between wood and fruit. The grapes come from the highest part of the Tremoedo estate, with very low yields, where green pruning, leaf removal and long maceration of the musts have been done to increase the life of this wine. Before the end of the fermenting, the oak barrels in which it is aged with batonage for 6 months are filled.

White wine from Gran Bazán winery, under the D. O. Rías Baixas. The grapes are destemmed and a cold maceration is carried out, with a controlled temperature of between 6 and 8ºC. Very gentle pressing and low temperature fermentation for two weeks. It is aged for 3 months on its fine lees. It does not undergo malolactic fermentation.
