Once the fermentation is finished, it is followed by a racking to eliminate the thick lees and the wine is kept in contact with its fine lees for 5 months before going on to the aging phase in French oak barrels for 6 months.

White wine from Son Alegre winery, under the Designation of Origin V. T. Mallorca. 15-year-old vineyards with plant cover to guarantee biodiversity in life and improve the microbiology of soils. The harvest is carried out manually in 15 kg boxes. Each variety is vinified separately in 2500 liter stainless steel tanks and after fermentation it spends 5 months on its lees. Finally, the coupage is made with the intention to achieve a balance between the different varieties.

The contact time of the pulp with the skins is reduced to the maximum during the vinification process, giving preference to the must obtained from direct pressing. Rosé wine from Hispano Suizas wineries, under the D. O. Valencia. The best grapes are selected from low-production strains from their own Sauvignon Blanc vineyards, with a planting density of 4,000 plants per hectare. The grapes are harvested in special boxes of 15 kg each. It is only harvested in the morning to maintain a good temperature in the grapes until they arrive at the winery. Once in the winery, the full boxes are placed in a cold room, keeping the grapes at -10ºC. After pressing and destemming, a cold skin maceration (0ºC) is carried out for barely two hours. The must that is extracted from the press ferments in new 400-liter American oak barrels at a temperature of 16ºC. Once the fermentation is finished, it is kept on the lees until bottled.
