Red wine from the Ànima Negra winery, under the Designation of Origin V. T. Mallorca. The harvest is done manually in small 10kg boxes, and the grapes are selected manually. Fermentation takes place in 7,000 and 10,000 liter stainless steel and cement tanks, at a maximum temperature of 27ºC. After fermentation, it undergoes a long maceration of between 15 and 20 days. The malolactic fermentation is carried out in cement tanks. AN/2 is aged for 13 months in French and American oak barrels.

Red wine from Vega Sicilia winery, under the D. O. Ribera del Duero. The vines are grown in plots with soils located in the contact between slopes that descend from the páramo and the alluvial plain. The most superficial soil is formed by fine hillside colluviums with small fragments of limestone, abundant quartzite gravels appear deep down in a sandy matrix and angular limestone edges abound on the surface. It ferments at a controlled temperature in wooden tanks with native yeast, where it will also carry out the malolactic. After fermentation, it goes through what is probably the longest aging in the world in a red wine: almost 10 years between wood and bottle. Red wine from Macán winery, under the D. O. La Rioja. The harvest is done manually in boxes of 12 kg. After the alcoholic fermentation, the malolactic takes place between the barrel, 30%, and the deposit, for the remaining 70%. The aging is carried out in fine and extra-fine grain French wood, most of it in new barrels and the rest in used barrels. It remains in wood between 12 and 14 months and the rest, until its sale, in the bottle.
