It undergoes a film maceration in the press itself for a few hours and then it ferments at a controlled temperature in a stainless steel tank, except for Giró, which ferments and is aged for 6 months in barrels. The rest remain 4 months on their fine lees before blending.

Manual selection of the grapes upon entering the winery. A skin maceration of about 10 hours is followed by gentle pressing and careful racking. Fermentation takes place at a temperature of 16ºC, half in French oak barrels and the other half in cement tanks. Fermented and aged 50% in barrels and 50% in cement tanks, remaining on its lees for a period of eight months.
