Rosé wine from the D. Mateos winery, under the DO Rioja. Manual selection of grapes. Fermentation at low temperature, with part of stems and uncrushed grapes, with several days of maceration. Malolactic fermentation takes place spontaneously.
100% Grenache from centuries-old vineyards planted in glass on the slopes of Mount Yerga. This vineyard was pardoned by Mateo Ruiz even knowing that it gave a minimal yield, but with the confidence that on its own it could make an exceptional wine. The wine undergoes a 15-month aging process in new fine-grain French Allier and Nevers oak barrels, with a toasting specially created for this wine together with the cooper.
