White wine from the Astobiza winery, under the Txakolí winery. Malkoa is a special txakoli, called estate or pago; authentic, genuine and with a much longer bottle life than what has been produced so far. Made with very ripe Ondarrabi Zuri grapes from a plot of our own vineyard and cultivated with integrated production viticulture, respectful of the environment. This txakoli remained for 20 months in an ovoid concrete tank, where its lees (yeasts) continually move spontaneously within a space without edges and with the help of the daily thermal oscillation between day and night. During this time, the wine self-stabilizes and gains volume in the mouth, integrating the rest of the components, then entering the bottle with a reducing aging, which completes its refinement.

White wine from the Astoniza winery, under the DO Txakoli. We select by plot and harvest by hand in small boxes. The second selection is carried out on the table, followed by the following processes: destemming and cold maceration prior to gentle pressing, static racking of the must, fermentation at controlled temperature, inerted, stabilized and microfiltered process.
