This vineyard was pardoned by Mateo Ruiz even knowing that it gave a minimal yield, but with the confidence that on its own it could make an exceptional wine. The wine undergoes a 15-month aging process in new fine-grain French Allier and Nevers oak barrels, with a toasting specially created for this wine together with the cooper.
