The grape, which manages to convey the characteristics of the climate of the area, is destemmed upon arrival at the winery facilities and is left to macerate cold. The must obtained subsequently ferments in open tanks at a controlled temperature. 8 Vents finishes the winemaking phase by resting for 12 months in French oak barrels.
