White wine from Son Alegre winery, under the Designation of Origin V. T. Mallorca. 15-year-old vineyards with plant cover to guarantee biodiversity in life and improve the microbiology of soils. The harvest is carried out manually in 15 kg boxes. Each variety is vinified separately in 2500 liter stainless steel tanks and after fermentation it spends 5 months on its lees. Finally, the coupage is made with the intention to achieve a balance between the different varieties.

Rosé wine from Toni Gelabert winery, under the D. O. Pla i Llevant. After the grape selection in the vineyard, the harvest is carried out by hand. Fermentation takes place in stainless steel tanks at low temperatures to extract the maximum amount of fruit. It does not perform malolactic to preserve the primary fruit and citric acidity.

Rosé wine from Es Fangar winery, under the D.O. Pla i Llevant. Totally organic vineyard. The harvest is done manually. The grapes are refrigerated and then destemmed. It is pressed and macerated for 24 hours with the skins to extract color. It ferments at a controlled temperature in isothermal stainless steel tanks. Finally, it is filtered and bottled.

Rosé wine from Hispano Suizas wineries, under the D. O. Valencia. The best grapes are selected from low-production strains from their own Sauvignon Blanc vineyards, with a planting density of 4,000 plants per hectare. The grapes are harvested in special boxes of 15 kg each. It is only harvested in the morning to maintain a good temperature in the grapes until they arrive at the winery. Once in the winery, the full boxes are placed in a cold room, keeping the grapes at -10ºC. After pressing and destemming, a cold skin maceration (0ºC) is carried out for barely two hours. The must that is extracted from the press ferments in new 400-liter American oak barrels at a temperature of 16ºC. Once the fermentation is finished, it is kept on the lees until bottled.
