Coming from the first strains of the Family in the Pago de Fuente Elvira in La Seca located on the plot of "El Cuadro", this wine lives pending that its weather year marks its character. Selected by hand, its short production is made in French oak vats for between six and eight months with its own yeast, making a periodic batonage, then carrying out a long aging with its dead yeasts in deposit and after bottling it ends up resting in our underground cellar. time determined by the winery, which can range from six to twelve months depending on the vintage.
