White wine from the Astobiza winery, under the Txakolí winery. Malkoa is a special txakoli, called estate or pago; authentic, genuine and with a much longer bottle life than what has been produced so far. Made with very ripe Ondarrabi Zuri grapes from a plot of our own vineyard and cultivated with integrated production viticulture, respectful of the environment. This txakoli remained for 20 months in an ovoid concrete tank, where its lees (yeasts) continually move spontaneously within a space without edges and with the help of the daily thermal oscillation between day and night. During this time, the wine self-stabilizes and gains volume in the mouth, integrating the rest of the components, then entering the bottle with a reducing aging, which completes its refinement.

Red wine from Protos winery, under the D. O. Ribera del Duero. The Protos Crianza has been made with a blend of different plots of Tempranillo to achieve a more real and complex expression. The vineyards have an average age of about 35 years. The 14-month aging has been carried out in new and used French and American oak barrels in equal parts. Once the oxidative aging is finished, it rests for another 14 months in the bottle.

Cada variedad se vinifica por separado en depósitos de acero inoxidable de 2500 litros y tras la fermentación pasa 5 meses sobre sus lías. Finalmente, se realiza el coupage con la intención de conseguir un equilibrio entre las distintas variedades.

White wine from Es Fangar winery, under the D.O. Pla i Llevant. Totally organic vineyard. Upon reaching the winery, the bunches remain in a specially designed cold room. It performs a cold maceration and is pressed before passing to isothermal stainless steel tanks by means of gravity, where it ferments at a controlled temperature. Finally, the settling is carried out and the wine is kept in contact with fine lees for 4 months.
