Pairing
Bright ruby ??red color with a high layer and little development.
Very marked aromas of licorice and stewed fruit (dried apricots, plums and cherries) that merge with notes from its aging in the barrel (spices, vanilla and roasted coffee) and a soft milky background.
Long and very broad wine with a marked acidity that balances it as a whole. Aftertaste of prunes and aromas of aging, vanilla and toasted bread with a tasty, sweet and mineral finish.
Pairing
poultry stews, grilled red meat, roast suckling pig, foie gras, cured cheeses and Iberian sausages. It is recommended to decant 30 minutes before serving so that the wine expresses its full potential

100% Grenache from centuries-old vineyards planted in glass on the slopes of Mount Yerga. This vineyard was pardoned by Mateo Ruiz even knowing that it gave a minimal yield, but with the confidence that on its own it could make an exceptional wine. The wine undergoes a 15-month aging process in new fine-grain French Allier and Nevers oak barrels, with a toasting specially created for this wine together with the cooper.

Rosé wine from the D. Mateos winery, under the DO Rioja. Manual selection of grapes. Fermentation at low temperature, with part of stems and uncrushed grapes, with several days of maceration. Malolactic fermentation takes place spontaneously.
