In this way, the vinification is adapted to the characteristics of each variety. It has been tried the fruit to have an important presence and the wine to be very expressive and fleshy in mouth, playing with the pre-fermentation cold macerations and discovering after 7 to 10 days of contact between pomace and must. Finally, it has been completed with a brief aging in stainless steel tanks together with a part in French oak barrels used to finish rounding and polishing the tannins.

Red wine from Can Majoral winery, under the D.O. Pla i Llevant. Gorgollasa, is a native Mallorcan grape variety that was practically disappeared and has been recovered in recent years. Vinification is done in stainless steel tanks with gentle pumping over and sinking of the cap for 2 weeks at a temperature of 25 ºC. After malolactic fermentation, the aging lasts for 9 months in 500-liter French oak barrels. This wine has not been cold stabilized; reason why it can present tartaric precipitations.
