Red wine from Mortitx winery, under the Designation of Origin V. T. Mallorca. Each variety is fermented in independent tanks. In this way, the vinification is adapted to the characteristics of each variety. It has been tried the fruit to have an important presence and the wine to be very expressive and fleshy in mouth, playing with the pre-fermentation cold macerations and discovering after 7 to 10 days of contact between pomace and must. Finally, it has been completed with a brief aging in stainless steel tanks together with a part in French oak barrels used to finish rounding and polishing the tannins.

White wine from Mortitx winery, under the Designation of Origin V. T. Mallorca. The grapes harvested by hand remain overnight in a cold room. This allows the reduction of oxidation phenomena during pressing and preserves the aromas of the grape itself. Fermentation is slow, at a controlled low temperature, thus developing the primary aromas. For several weeks the wine lees are worked on. Finally, the necessary racking is carried out and it is prepared for the final bottling.

Rosé wine from Mortitx winery, under the Designation of Origin V. T. Mallorca. This wine has been made on a Monastrell base. The contact time of the pulp with the skins is reduced to the maximum during the vinification process, giving preference to the must obtained from direct pressing. A slow fermentation, carefully monitored and meticulous work with the lees, allows to obtain an original wine with a round body and pleasant aromas and flavors.

Sweet wine from Mortitx winery, under the Designation of Origin V. T. Mallorca. To make this sweet wine, the grapes that have reached optimum maturity are frozen and pressed, resulting in a must with more than 350 grams per liter of sugar. The fermentation process is slow, and stops spontaneously when reaching the indicated final alcohol level. In this way, a natural balance between residual sugar and alcohol is achieved, obtained entirely from the grape itself. The wine spends a year in French oak barrels before being bottled.

Red wine from Can Majoral winery, under the D.O. Pla i Llevant. Gorgollasa, is a native Mallorcan grape variety that was practically disappeared and has been recovered in recent years. Vinification is done in stainless steel tanks with gentle pumping over and sinking of the cap for 2 weeks at a temperature of 25 ºC. After malolactic fermentation, the aging lasts for 9 months in 500-liter French oak barrels. This wine has not been cold stabilized; reason why it can present tartaric precipitations.

Red wine from Marqués de Cáceres winery, under the D. O. La Rioja. The harvest is done completely manually. The grapes are destemmed before going to fermentation in stainless steel tanks at controlled temperature. In the tanks, the must macerates with the skins for 20 days and malolactic fermentation takes place between tanks and barrels, depending on the plot. Subsequently, it rests in barrels for 6 months. Finally, it is aged in new and used French and American oak barrels for 12 months. It will spend at least another year in the bottle before it goes on sale.

The best grapes are selected from low-production strains from their own Sauvignon Blanc vineyards, with a planting density of 4,000 plants per hectare. The grapes are harvested in special boxes of 15 kg each. It is only harvested in the morning to maintain a good temperature in the grapes until they arrive at the winery. Once in the winery, the full boxes are placed in a cold room, keeping the grapes at -10ºC. After pressing and destemming, a light pressing of no more than 0.5 bar is carried out. Subsequently, it is fermented in new 400-liter American oak barrels at a temperature of 14ºC. Once the fermentation is finished, it is kept on the lees until bottled.

Once in the winery, the full boxes are placed in a cold room, keeping the grapes at -10ºC. After pressing and destemming, a cold skin maceration (0ºC) is carried out for barely two hours. The must that is extracted from the press ferments in new 400-liter American oak barrels at a temperature of 16ºC. Once the fermentation is finished, it is kept on the lees until bottled.
