Sparkling wine from Hispano Suizas wineries, under the D. O. Cava. The best grapes are selected from low production strains from their own Pinot Noir vineyards, with a planting density of 3,500 plants per hectare. Once in the winery, the full boxes are placed in a cold room, keeping the grapes at -10ºC for days. The grape paste resulting from the destemming and crushing is incorporated into a stainless steel tank with a cooling system to proceed to a cold film maceration (4ºC) for a maximum of two hours so as not to overdo the extraction of color. The resulting must is incorporated into new 400-liter American oak barrels, where the first fermentation will take place. Subsequently, the must ferments in French and American oak wood. After a brief rest in stainless steel tanks to remove coarse particles, aging begins in French and American oak barrels for a year.

Sweet wine from José L. Ferrer winery, under the D. O. Binissalem. Cold skin maceration to enhance the extraction of aromas. The must is obtained by pneumatic pressing at low pressure. Fermentation at a controlled temperature at around 12ºC in stainless steel tanks. Finally, there is a voluntary fermentation stop by cooling the wine until it reaches 0 ºC, thus preserving residual sugars in the grape.

Sweet wine from Hispano Suizas wineries, under the D. O. Utiel-Requena. The best grapes are selected from low production vines from our own old Pinot Noir vineyards. The grapes overripe in the vineyard until they reach more than 18º. Once in the winery, the boxes full of grapes are placed in a cold room, keeping the grapes at -10ºC. The must is pressed at -10ºC to be able to concentrate the must to more than 23ºC. This concentrated must ferments at a temperature of 16ºC for more than 40 days until it reaches a stop of fermentation by lowering the temperature to -2ºC, obtaining an alcohol of 12.5º-13º and more than 100 g / l of natural residual sugar . Once the fermentation is finished, it is kept on lees until its final filtration.

Red wine from Mauro winery, under the D. O. Vino de la Tierra de Castilla y León. Terreus is one of the great reds of Spain. A farm wine from the Paraje de Cueva Baja. It is a plot of just 3 hectares planted on a very loose soil of clay and sand. The harvest is done manually in boxes and is transferred to the winery where a meticulous selection is made. Slowly fermented with native yeasts and macerated for 2 or 3 weeks. Finally, it is aged for 33 months in French oak barrels.
