Red wine from Castell Miquel winery, under the Designation of Origin V. T. Mallorca. The grapes come from 30-year-old vineyards that are harvested manually after selecting the bunches in situ. Upon arrival at the winery and after destemming, the grapes are selected grain by grain. The must undergoes a cold pre-fermentation maceration and later ferments in European oak vats. The malolactic fermentation takes place in 500-liter French oak barrels, where it is aged for 12 months.

Red wine from Es Fangar winery, under the D.O. Pla i Llevant. Totally organic vineyard. The harvest is done manually. The grapes are refrigerated when they arrive at the winery and are subsequently destemmed and selected grain by grain at the table. It passes through gravity to the isothermal stainless steel tanks, using only flower must. The malolactic fermentation takes place in wooden foudres. The blend is made and, finally, it undergoes a 32-month aging in used oak barrels.

Red wine from Can Majoral winery, under the D.O. Pla i Llevant. Vinified in stainless steel, following a maceration process with an immersed hat for 2 or 3 weeks at a temperature of 25º C. Twelve months in new and one-year-old French oak barrels. This wine has not been cold stabilized; therefore, it can present tartaric precipitations. The total production is only 5000 bottles.

Red wine from Can Majoral winery, under the D.O. Pla i Llevant. Callet is a very special variety because it requires old vines, a great maturation and a very appropriate selection of grapes. Therefore, this wine is produced very little and only really good years come out. Fermentation and maceration in open oak barrels for 2 weeks at 25ºC. The malolactic fermentation took place in barrels. Aging lasted 12 months in French oak barrels of the Quercus petraea type. This wine has not been cold stabilized, so it can present tartaric precipitations.

The autochthonous varieties are made in stainless steel tanks with fermentation below 20ºC to maintain their aromatic components. Red wine from Pesquera winery, under the D. O. Ribera del Duero. The Dehesa La Granja has been made from vineyards located in the southwest of the province of Zamora, in the Dehesa la Granja estate, with a total of 800 hectares of cultivation, dedicated to livestock and various crops of which 101 hectares are of vineyards. The soil is formed by sediments of sandstones, clays and limestone puddings, which on the surface originate limestone soils. Silty materials alternate with coarse and fine-grained sandstones. Once the fermentation is finished, it remains for 24 months in American oak barrels, located under the ground, and a further 12 months of rest in the bottle.

After the harvest, a cold maceration and fermentation is carried out at a controlled temperature in stainless steel tanks to preserve the fruity aromas of the grape as much as possible and obtain the best extraction of color. Afterwards, it is aged for 16 months in American and French oak barrels. Finally, it rests for a few months in the tank to achieve a good assembly of the wine before bottling.

The best bunches are selected when they arrive at the winery and later they are destemmed and a second selection is made grain by grain. Lastly, it is aged in French oak barrels for 18 months, 4 of which are in contact with its lees.
